Frittatine trippate

Today we had some friends for lunch and I decided to cook something special. And since on Saturday we generally eat eggs, I decide to prepare something with eggs, of course. I then prepared the Frittatine trippate, a typical Florentine dish, with tomato sauce and Italian omelettes. It’s very easy and it’s perfect for kids. Let’s see together how to prepare this delicious food.

Ingredients for 4:
100 gr All purpose flour
3 eggs
1 glass of milk
30 gr of butter
200 gr tomato sauce
1 onion
parmesan cheese
salt and pepper

Take a large bowl and mix together the flour, the eggs and the milk using an electric whisk. Soften the butter in the microwave and then mix it together with the mixture. Now add a pinch of salt and a pinch of black pepper. Mix all together until the mixture becomes smooth and has no lumps.

Take a small frying pan and baste it with some butter. As soon as it’s hot, take part of the mixture using a ladle and cook it on both sides – you should cook an omelette. The omelette should be not too much cooked (i.e. it should be light yellow). Go on like this until you finish the mixture and you have prepared all the Italian omelettes.

In the mean time, while the omelettes are cooling down, start chopping the onion into small pieces. Then put some olive oil in a large pan and add the onion. As soon as it starts browning add the tomato sauce and coddle it for about 10 minutes.

While the tomato sauce is coddling, take the Italian omelettes and roll each up. Then take a pair of scissor and cut each omelette into pieces. The result should look like tripe. Now add all the pieces to the tomato sauce and cook it together for about 2-3 minutes, stirring constantly.

Then serves the Frittatine trippate with a large spoon of parmesan cheese on top of them. Buon appetito and gnam gnam!
