Florentine Ragù Sauce

One of my favorite recipes is the Ragù sauce, that is the perfect sauce for your pasta the Italian way.


This recipe comes from my grandma, who prepares it every Sunday. Since it is a Florentine recipe we use wine to season it, so take a bottle of good Chianti wine, that I suggest you to drink while eating pasta with the ragù sauce you just prepared.

Ingredients:
300 gr of minced meat
400 gr of flesh of tomato
50 gr of tomato paste
1 red onion
1 carrot
1 celery
1 stock cube
1 glass of Chianti wine
olive oil
salt and pepper

Slice thinly the onion, the carrot and the celery. Put them into a large stewpan with 6 large spoons of oil and the stock cube and cook it on a low flame for half an hour. Then add all the minced meat and let it go for a few minutes. Now add the tomatoes, the paste and the wine. Cook it on a low flame covered for at least one hour and half. The wine should evaporate completely as well as all the liquids and the sauce should be dry.

Now cook some good Italian pasta and dress is with this Florentine ragù sauce! Gnammy gnammy!
