The crepe suzette are a famous French dessert that consists of a crepe with a sauce of caramelized sugar and butter and orange juice. But what you have to know that the original recipe comes from Florence Renaissance and it is called “Ritortelli d’uovo” (twisted eggs). Here is the recipe.
Ingredients for 4 people:
4 eggs
3 blonde oranges
2 tb spoons of milk
1 tb spoons of all-purpose-flour
butter
sugar
cinnamon
Whisk the eggs with the milk, the flour and a pinch of salt. The batter should be very liquid with no lumps. When ready take a piece of butter and dissolve it into a hot frying pan. Then pour the batter onto the hot pan. Cook it on both sides for a couple of minutes and then put on a plate.
In the meantime turn the oven on at a temperature of 150°. Now sprinkle each crepe with some sugar, a bit of cinnamon and some orange juice. Do it on both sites and then roll each crepe as it was a cigar. Put all rolled crepes onto a baking pan and sprinkle them with other sugar and the orange juice you have left. Put everything in the oven for about 10 minutes or until the sugar is caramelized.
