Trippa alla fiorentina

Trippa alla fiorentina is a classic recipe of Florentine traditional cuisine. So let’s see together how to prepare the original tripe florentine style, that you cook in about 30 minutes.


Ingredients:
1 kg of tripe, blanched and boiled
300 gr of tomatoes, peeled and finely chopped
1 onion, chopped
1 carrot, chopped
1 stick of celery, chopped
Parmesan cheese
Olive oil
Salt and pepper

Saute onion, carrot and celery into a large pan with 4 spoons of olive oil for about half an hour on a low flame. In the meantime use the best part of the tripe and cut it into thin strips. Put it to the pan and season it for about 10 minutes.
Now add tomatoes, salt and pepper and go on cooking for about 20 minutes on a medium flame with the cover. When the cooking is done add 3 spoons of Parmesan cheese. The tripe should be dry, so if it’s too saucy let it dry for a few minutes.
Then serve trippa alla fiorentina hot with more Parmesan on top. Buon appettito!
